Veg Pulp Burgers on a Glueten Free Socca Flatbread

Juicer pulp patties:

-vegetable pulp (use fennel, beets, carrots)

-roasted sweet potato (use oil and steak spice)

-mixed beans

*All equal parts and blend together using a hand blender add

-onion powder, garlic pepper, steak spice, sesame oil, hickory smoke, crushed garlic, worcester sauce (for taste and texture)

Glueten free flatbread socca:

-2 cups chickpea flour

-2 cups water

-5 tbsp oil

-pinch of salt

Toppings: (suggested)

-alfalfa sprouts, pineapple ring, tomato, pickles, avocado sauce (mashed avocado, oil, vinegar, siracha, onion powder, salt & pepper), pea shoots, cilantro and arugula

Directions: heat up mini cast iron pans with coconut oil with high smoke point to 450’F in the oven. Using ladle add the mixture into the pans and bake for 15 min. Monitor closely.
